Poultry, Game & the Professional Kitchen: Mastering Premium Proteins

This course develops your knowledge and practical understanding required to work with poultry and game in a professional kitchen environment. We will explore the characteristics, structure, quality factors, preparation methods, and cooking techniques used when handling domestic poultry, feathered game, and furred game. You will build the skills needed to select, prepare, cook, and present premium proteins to professional culinary standards.

Meat quality

We examine the differences between poultry and game, including how diet, farming methods, age, and handling affect flavour, texture, and nutritional value. A wide range of poultry and game species is covered, such as chicken, duck, goose, turkey, venison, rabbit, and wild boar, with emphasis on composition, cuts, and suitable cooking methods.

Quality and product selection are explored in detail, including the differences between commercial, free-range, pasture-raised, and organic poultry, and how these factors influence taste, nutritional value, and suitability for different kitchen operations.

Professional culinary skills

Professional skills are reinforced through the study of preparation techniques such as deboning, barding, stuffing, shaping, and portioning, together with the correct use of dry-heat and moist-heat cooking methods appropriate for poultry and game meats.

Finishing and presentation standards are also addressed, including sauces, garnishes, plating techniques, and quality control points to ensure dishes meet professional expectations for flavour, tenderness, appearance, temperature, and consistency.

On completion, you will be able to confidently select suitable poultry and game products, apply correct preparation and cooking techniques, and present finished dishes to the standard expected in a professional kitchen.
